High Protein Chicken and Egg Salad with Buttermilk Dressing
A lovely salad that happens to be super high in protein and low in carbs and fat. Chicken, eggs and spinach are the main ingredients, and the dressing is made with buttermilk instead of oil, saving a whopping amount of calories.
Olive oil is good for us. We all know that by now. But the bitter truth is, it’s still fattening. And as much as we want to be all “oh I’m just interested in healthy eating rather than losing weight”, the other – even more bitter – truth is that sometimes we wish we could shed a few pounds. Don’t we?
This dressing is a fantastic way of saving a significant amount of calories, without compromising on the healthiness of our salad. Buttermilk is the magic ingredient. Before you say “I hate buttermilk”, just try it once. It doesn’t taste buttermilky at all. You can make the dressing as sharp as you want it by increasing or decreasing the vinegar, and you can add your favourite herbs or spices. Tailor the ingredients to your liking, and you’ll have an amazing dressing to accompany all your salads, from a practically zero calorie assortment of lettuce, to a more substantial but lightened up version of a potato salad. It also suits cold meats and eggs, a combination I’ve suggested here.
This salad is a good option for the Dukan Diet, as it’s so high in protein but low in carbs and fat. You can even skip the green stuff and have just the meat and eggs on a Pure Protein day.
