Whether you call them ice pops, or popsicles, or ice-lollies, these treats are super refreshing, super tasty and super healthy. Frozen Greek yoghurt with peaches and honey, on a stick. Yum.

The last few days have been pretty warm here in Greece. Not that the July heat is the worst of our problems at the moment. Anyway, not going there. So, frozen yoghurt pops. How great are they? Really great. Trying to make a tub of frozen yoghurt that is not loaded with cream is quite tricky. It becomes rock hard and difficult to serve and indeed eat. So making it in ice pop form is the best solution. You don’t have to worry about bending all your spoons, and they don’t melt as fast as regular ice cream pops. And of course they are so healthy that you can eat as many as you want. Genius.

Here I threw together my favourite combination of Greek yoghurt and ripe juicy peaches, adding some honey for a hint of sweetness. It’s gorgeous to eat as is, but freezing it gives you that extra refreshing coolness and tricks your mind into thinking it’s eating something unhealthy.

Ingredients

1 1/4 cup Greek yoghurt, plain (I use full fat)

1/4 cup evaporated milk (not sweetened condensed)

2 Tbs honey (or more if you prefer)

2 small peaches, chopped

Step 1

Mix the Greek yoghurt, evaporated milk and honey in a bowl. Add the peaches and incorporate.

Step 2

Fill your ice pop moulds and place in the freezer till completely frozen.

Notes: The amount of ice pops you get for these quantities will largely depend on the size of your moulds.

To serve just hold the moulds in your hands till their heat loosens the frozen treats inside. Running them under a tap seems to be such a waste of water.

    Yum! I can just imagine how delicious these must be. And simple to make, wow. Plus you get a protein boost from the Greek yogurt… Fabulous! These are definitely the ultimate pops 😉
